Who doesn't love a good jerk chicken?
Ingredients
For Jerk Marinade:
- 3 scallions
- 4 large garlic cloves
- 1 small onion
- 5 Scotch bonnet chile
- 1/4 cup of fresh lime juice
- 2 tbsp Soy Sauce
- 3 tbsp Olive Oil
- 1 1/2 tbsp salt
- 1 tbsp brown sugar
- 1 tbsp fresh thyme leaves
- 2 tsp ground allspice
- 2 tsp black pepper
- 3/4 tsp fresh nutmeg
- 1/2 tsp cinnamon
Chicken:
- 4 chicken breast halves
- 3 pounds of thighs and drums
Directions
- Blend all Jerk Marinade ingredient
- Bag chicken in a zip-lock or sealable plastic bag. Use multiple bags if needed. Distribute marinade in the bag, shake to cover chicken. Marinate and chill for one day.
- Let chicken stand at room temp for 1 hour before cooking
- Using a conventional oven: Preheat to 420F/215C and cook for 45 minutes.
- Observe until golden brown or crispy dark brown, based on your preference
- Let it rest for 30 minutes before serving
